Foodie Friday

Since I've been experimenting with many different recipes lately I've also decided I don't want to constantly blog about food (although I know no one would mind) but still share the dishes and spread the wealth. Unless I do something really cool, or come up with my own great concoction I've felt that establishing a "Foodie Friday" would be a great way to photo dump and share all the things I've been up to in the kitchen that week. Or even sharing great dishes I've had anywhere really. This will be a big one because I have a bunch I've been waiting to share!

As usual most of these recipes were found via Pinterest and it's become a new ritual for me and Mr. Charming to sit down over the weekend and peruse my boards to make a menu for the week. We've had these over the past two weeks and they've all been great...

Summer Squash Pizza
Via Cooking Light. We didn't grill (broiled the veggies) and used awesome fresh dough from Tom Leonards. Also had a good size serving of veggies leftover that didn't fit on the pizza. And of course used a little bit more cheese!

Tilapia Tacos with Homemade Salsa
Via Give Me Some Oven. We added tomatoes to the salsa and seasoned the fish with Tony Chachere's instead of blackening powder. Want to make the salsa to just to have with chips, mmm.


Tropical Shrimp Quesadillas
MC picked out this one from Witty in the City all by himself, went shopping and did most of the work. I was pretty impressed, with him and the dish!

Chipotle Black Bean Burgers
Via Iowa Girl Eats. Now officially obsessed with chipotle peppers in adobo sauce. Can I put them in everything? Amazing smoky flavor!

Additionally I made an awesome dipping sauce for sweet potato fries. Two spoons of plain Greek yogurt, heaping tablespoon of honey and a few good shakes of cinnamon. Yum!

Quinoa Stuffed Bell Peppers
Via Eat Yourself Skinny. A bit time intensive because it bakes for a while, but worth the wait. If I did this one again I'd prepare the quinoa mix the night before.

Creamy Avocado Pasta
Via the Flourishing Foodie. I'm literally drooling thinking about eating this again...

Shrimp and Pesto Pizza
Via Live, Love, Travel. The original recipe calls for goat cheese which I'm obsessed with, but MC doesn't quite care for. It was great but I think goat cheese would have bumped it up to the next level!

Vegan One Pot Stir Fry
Via Chef Mom. I don't think we used the right noodles, and we subbed red pepper paste for Siracha. It tasted just fine though. Also added tofu for a protein boost!

Parmesan Crusted Tilapia
Via Rachel Ray. Definitely looked nothing like the pic, but I used store bought grated parm vs. fresh. Really wasn't that flavorful, I'd add some additional spices next time.

BBQ Cheddar Chickpea Burgers
Via How Sweet It Is. I'm still drooling as I think about these. I think the burgers needed to firm up a bit before we cooked them, maybe 20-30 mins in the fridge? But really, put bbq sauce on anything and I'll eat it...

Crab & Gruyere Pizza
Monday has officially turned into pizza night at our house! With crusts from Trader Joe's and a new pizza cookbook from World Market we're excited to start going through some of the awesome recipes!

Quinoa Black Bean Burrito Bowls
 Via The Shiksa in the Kitchen. Closest I've gotten to replicating Chipotle's burrito bowl...so fabulous!

Vegetarian Sloppy Joes
Via Veg Kitchen. MC actually made the entire thing by himself and it smelled amazing! It didn't taste bad, but just didn't taste like the real thing. And yes, I know this is one because there's no meat in it. But I'm more referring to the taste of the sauce. Though it was much cleaner to make the sauce I think we might actually just opt for the canned kind next time after I check the label...

Those black bean burgers from IGE are on my menu for this week! Funny :) Glad to hear you liked them - I have loved just about everything of hers that I've made. Now I'm even more excited to make those burgers.
