...two kinds of beans and avocado cream!
Sounds interesting right? Well that's what we had for dinner last night and it was phenomenal! One of my favorite food blogs to browse is How Sweet It is, and recently her "Easy Double Bean Burgers with Avocado Basil Cream" caught my eye.
How could they not though? A great recipe for a non-meat burger, check. Avocado, check. CREAM? double check!
These really were easy peasy to make, and Mr. Charming had fun being in charge of smashing the beans with a potato masher. As I don't yet have a food processor I've shied away from many non-meat "burger" recipes as you need the equipment for most of them. That was another appeal of this recipe. (What you'll see below is this tiny food processor type thing, but I need the big mama)
That, and oh yea the avocado cream. Did I mention that yet?
I did make a few adjustments to the cream recipe. I swapped the sour cream for plain Greek yogurt. One, because it's an ingredient I always have in my fridge anyways, two, it added even more protein to this superior meal and three...it's better for you. Sweet & simple. Additionally I swapped basil for cilantro because it's what I had and it gave it more of a fun Mexican flavor...like creamy guac?
My patties didn't stay together incredibly well when cooking, I'm not sure what may have been the downfall there. But they were still scrumptious so oh well! I also swapped toasted bread for buns because I knew we wouldn't finish a whole pack. Maybe next time.
For the meat-eaters, MC actually liked this dish more than I thought he would. Even sent me a panicked email at work today "Hey where did the bean burgers go? There are none in the fridge!" I was clear last night that I'd pack one for lunch today and the others would go in the freezer. Guess I can put this recipe on the keeper list.
He didn't particularly care for the avocado cream (sigh) and nearly broke my heart when he doused in second burger in ketchup. But then I stuck to the positive...more cream for me!
We watched TV afterwards and when I couldn't stop thinking about the cream I came up with a good idea. It would be AWESOME in a seven-layer Mexican dip. Usually I'll put sour cream and guac in mine, but using this creamy avocado mixture may be fun to change things up. It's on the lineup for the summer!
